What's the real difference between dark and milk chocolate?

Dark chocolate contains cacao and sugar; milk chocolate adds milk solids, which soften bitterness, add creaminess, and usually lower the cacao percentage. Craft chocolate blurs the line: 'dark-milk' bars at 50–70% cacao combine dark intensity with milk's texture, and several of the highest-rated bars in our catalog are exactly this style.
